This tong sui has a unique sweetness and subtle melon fragrance. The winter melon has a mild taste with a subtle hint of honeydew melon. Once cooked, it turns soft and juicy, soaking up the flavors of the soup.

Luo han guo (monk fruit) brings a distinct sweetness without the need for much added sugar. It also lends a subtle herbal note that pairs beautifully with red dates and longan, resulting in a light, soothing, and aromatic dessert soup.

Both winter melon and luo han guo have cooling properties. Served warm, it feels nourishing and comforting. Chilled, it’s wonderfully cooling and refreshing—perfect for hot weather or when your body feels overheated.

Snow Fungus with Barley Dessert Soup “Tong Sui”

This Snow Fungus Barley Tong Sui has a unique mild fragrance that comes from the barley and a pleasant mix of textures — soft jelly-like snow fungus and chewy barley. You can enjoy it warm for comfort or chilled to cool down on a hot day. This dessert soup is tasty and good for nourishing the skin and cooling the body.

Snow fungus is great for nourishing the skin and help your body stay hydrated. It’s popularly known to improve complexion. It has a neutral flavour and absorbs the flavours from the other ingredients. After cooking, the snow fungus will turn into a soft, jelly-like texture that feels really soothing.

Barley adds a gentle chew and a mild unique fragrant flavor. It’s also cooling, making this soup a nice choice when you want something nourishing but light.

I usually add red dates to naturally sweeten the soup and support blood circulation.

Today, I’m sharing my recipe for Chrysanthemum and Peach Gum Tong Sui — another dessert soup that’s both tasty and good for cooling the body especially in hot or dry weather.

Chrysanthemum is great for cooling your body and help your body stay hydrated. I love this dessert as it is light, has a lovely natural floral fragrance coupled with the interesting chewy, gummy, jelly-like peach gum.

You can enjoy this warm or chilled. I hope you find this dessert as comforting and refreshing as I do.
