Chinese Cucumber Salad “凉拌青瓜”

Chinese Cucumber Salad is very refreshing. I was introduced to this dish when I visited Beijing, China. In China, salad is known as cold dish “凉拌”. Its not common to have cold dishes during chinese meals in Malaysia. So I was so fascinated with the variety of cold dishes served in China.

There are a variety of ways to make this cucumber salad. In this recipe, I used a few basic seasonings. You can add other seasoning and ingredients such as chilli oil and coriander to your liking.

Ingredients:

  • 2-3 Japanese Cucumber 青瓜 2-3个
  • Garlic 4 cloves 大蒜 4瓣
  • Sugar 1 teaspoon 糖 1茶匙
  • Rice vinegar 1 teaspoon 米醋 1 茶匙
  • Light soya sauce 1 tablespoon 生抽 1汤匙
  • Vegetable oil 30-40 ml 油 30-40毫升
  • Salt to taste 一少盐

Method:

  1. Cut cucumber into diagonal cubes or thin slices
  2. Finely chop garlic
  3. Place garlic and sugar into a bowl (note: bowl should be able to withstand hot oil such as porcelain or ceramic)
  4. Heat up oil in a pan. Pour the hot oil into the minced garlic and sugar
  5. Then add the combined garlic oil into the chopped cucumber
  6. Add soya sauce and rice vinegar. Toss and mix well
  7. Place in the fridge for 30 minutes before serving
