Use silken or soft tofu for the best texture
Steamed tofu is recommended as it will absorb the flavours of the sauce. Choose soft or silken tofu and handle it gently to avoid breaking.
You may remove excess water after steaming
After steaming the tofu, you can remove excess water but I usually skip this step as the plate is hot.
Adjust heat while cooking the minced pork.
Adjust heat of the stove while sautéing the garlic and minced pork.

Steamed Tofu with Minced Pork
Equipment
- Steam Basket or Steamer Pot
Ingredients
- 150 grams minced pork
- 1 silken tofu
- 3 cloves garlic
- 2-3 tablespoon vegetable oil
- some spring onion for garnishing
Marinate for Pork
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/2 teaspoon sugar
Seasoning
- 1/2 tablespoon light soy sauce
- 1 tablespoon abalone sauce/oyster sauce
- 1/2 teaspoon dark soy sauce
- 1 tablespoon shaoxing wine
- 1.5 teaspoon cornstarch
- 125 ml water 1/2 cup
Instructions
Prepare minced pork
- In a bowl, combine minced pork, salt, pepper and sugar. Mix well and set aside.
Prepare seasoning
- Combine all the seasoning ingredients in a bowl and mix well until the cornstarch is fully dissolved.
Steam Tofu
- Place the tofu on a steam proof bowl/plate. Remove any excess water. Then add water in a wok and bring water to a boil. When the water is boiling, place the tofu on the steam basket. Steam on high heat for 6-8 minutes.
Cook minced pork
- While the tofu is steaming, cook the minced meat.In a pan, add cooking oil. Add garlic and fry on medium heat until fragrant. Add the minced pork, fry on medium heat until the oil starts to separate from the minced pork. Then add the seasoning. (Note: stir the seasoning just before adding in to make sure the cornstarch is fully dissolved).Sauté until the sauce thickens. Then set aside.
Combine minced pork and tofu
- Once the tofu is ready. Pour the minced meat and the sauce on top of the tofu. Garnish with some spring onions.
