Ingredients

  • 3 eggs
  • 100 grams minced pork
  • 3-4 cloves garlic minced
  • 3-4 tablespoon neutral cooking oil

For Egg

  • 300 ml water
  • 3/4 teaspoon salt

Minced Pork Seasoning

  • 1/2 tablespoon light soy sauce
  • 1 teaspoon oyster sauce
  • 1 tablespoon Shaoxing wine
  • 2 tablespoon water 30 ml
  • 1/2 teaspoon cornstarch
  • pinch of sugar optional

Garnishing

  • 1 tablespoon spring onion

Instructions

Prepare the eggs

  • In a bowl, whisk the eggs until well combined. Add water and salt, then gently mix using a fork. Pour the egg mixture into a steam-proof bowl.

Set up the steamer

  • Add water to a wok and bring it to a boil. Reduce the heat to low, then place the bowl with the egg mixture onto the steam rack. Tilt the lid slightly to leave a small gap—this helps ensure a smooth egg texture. Steam the egg for 10 minutes.

Prepare the minced pork

  • Mix all the seasonings together in a bowl until fully combined. Make sure the cornstarch is fully dissolved.
  • Heat oil in a saucepan and add minced garlic. Sauté until fragrant, then add the minced pork. Mix the pork and garlic well to prevent the garlic from burning. Let the meat sear on one side for better flavor, then flip and sear the other side.
    Once the pork is cooked, pour in the seasoning (stir the sauce before adding it). Cook until the sauce thickens, then turn off the heat.

Assemble the dish

  • Pour the minced pork and sauce over the steamed egg. Garnish with spring onions and serve warm.
