Chinese Style Steamed Egg with Minced Pork

Ingredients

Egg Mixture 鸡蛋液:

  • 3 eggs 3个鸡蛋, 室温 room temperature
  • 300 ml water 300毫升水
  • 3/4 teaspoon salt 3/4 茶匙盐

Minced pork ingredients 肉碎的用料:

  • 100 grams minced pork 100克肉碎
  • 3-4 cloves garlic 3-4 瓣大蒜,切碎 minced
  • 3-4 tablespoon neutral cooking oil 3-4汤匙食用油

Minced Pork Seasoning 调味料:

  • 1/2 tablespoon light soy sauce 1/2 汤匙生抽
  • 1 teaspoon oyster sauce 1 茶匙蚝油
  • 1 tablespoon Shaoxing wine 1汤匙绍兴酒
  • 2 tablespoons 2 汤匙,30毫升水 30 ml water
  • 1/2 teaspoon cornstarch 1/2 茶匙 玉米淀粉
  • pinch of sugar 少许糖

Garnish 装饰:

  • Spring onion 葱

Instructions

Prepare the eggs

  • In a bowl, whisk the eggs until well combined. Add water and salt, then gently mix using a fork. Pour the egg mixture into a steam-proof bowl.

Set up the steamer

  • Add water to a wok and bring it to a boil. Reduce the heat to low, then place the bowl with the egg mixture onto the steam rack. Tilt the lid slightly to leave a small gap—this helps ensure a smooth egg texture. Steam the egg for 10 minutes or until set.

Prepare the minced pork

  • Mix all the seasonings together in a bowl until fully combined. Make sure the cornstarch is fully dissolved.
  • Heat oil in a saucepan and add minced garlic. Sauté until fragrant, then add the minced pork. Mix the pork and garlic well to prevent the garlic from burning. Let the meat sear on one side for better flavor, then flip and sear the other side.
    Once the pork is cooked, pour in the seasoning (stir the sauce before adding it). Cook until the sauce thickens, then turn off the heat.

Assemble the dish

  • Pour the minced pork and sauce over the steamed egg. Garnish with spring onions and serve warm.

Notes

Whisk Gently for a Smooth Texture: When whisking the eggs with water and salt, avoid over-beating. Instead, whisk gently to minimize air bubbles, which can disrupt the smooth texture of the steamed egg.
Steam with a Slightly Tilted Lid: Tilting the lid slightly to ensure even heat throughout the cooking time. This will help to get a smooth egg texture. 
Control steaming temperature: After bringing the water to a boil, always reduce the heat to low before steaming the egg. High heat can cause the egg to bubble, leading to a rough or uneven surface.
Perfect Searing for Flavorful Pork: Immediately mix the minced pork with the garlic to prevent garlic from burning. Then, let it lightly sear on one side undisturbed until it turns light golden. This caramelization enhances the depth of flavor in the dish.
