Texture and Taste
This dish is simple yet full of flavor. The minced pork is tender and juicy, while the French beans add a natural sweetness and a satisfying crunch. The garlic gives a fragrant aroma, and the light soy sauce and oyster sauce add a savory, umami taste. A touch of salt and sugar balances everything perfectly.
Background Story
My Dad cooked this dish very often. I believe it’s a Hakka-style recipe because many Hakka dishes involve chopping ingredients into small cubes. This is one of my favorite dishes; it’s simple and comforting.
Ingredients and Substitutions
- Minced pork: Provides natural sweetness. The fats from the pork adds aromatic flavour to the dish. Can be substituted with minced chicken or beef.
- French beans: Adds a crunchy texture and natural sweetness.
- Garlic, minced: Adds aromatic flavor.
- Light soy sauce: Provides a salty, umami flavor. Can be substituted with salt.
- Oyster sauce: Adds depth and sweetness. Can be substituted with abalone sauce.
- Cooking oil: Used for frying. Any neutral oil like canola or vegetable oil or light olive oil can be used.
- Salt and sugar: Balances the flavors. Adjust to taste.
- Shaoxing wine (optional): Adds aromatic flavor.
Helpful Cooking Tip
- Cook the garlic until fragrant.
- After adding the meat, mix the garlic and the meat well so that the garlic doesn’t burn.
- Spread the minced meat over the pan and let it sear on one side to make it more fragrant. Flip over and repeat.
- Cook the beans until you get the desired softness. (Note: the longer you cook the beans become less crunchy and shiny.)
Enjoying and Storing the Dish
This dish is best enjoyed warm, served with steamed rice. It makes for a perfect quick dinner or lunch. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. To reheat, simply stir-fry in a hot pan for a few minutes until warmed through. You can also steam or place in the microwave or oven.
