Steamed Minced Pork with Coriander

Ingredients

  • 350 +/- grams minced pork 350+/-克猪肉碎
  • 35 grams coriander 35克香菜

Seasoning 调料:

  • 4 cloves garlic minced 4 瓣大蒜,切碎
  • 1/8- 1/4 teaspoon salt 1/8- 1/4 茶匙盐
  • 1 tablespoons oyster/abalone sauce if you use oyster sauce, reduce salt1汤匙鲍鱼酱/蚝油 (如果用蚝油,就减少盐的用量)
  • 1 tablespoons light soy sauce 1汤匙生抽
  • 1 tablespoon shaoxing wine 1汤匙绍兴酒
  • pinch of sugar 少许糖
  • 1 teaspoon cornstarch 1茶匙玉米淀粉

Garnish 装饰:

  • 1 sprig coriander 1 根香菜

Instructions

Prepare the Coriander

  • Rinse the coriander thoroughly and remove the roots.
  • Cut into small chunks and set aside.

Season the Pork

  • Place the minced pork in a bowl.
  • Add salt, light soy sauce, sugar, abalone sauce (or oyster sauce), Shaoxing wine, and minced garlic.
  • Mix well using your hands, a fork, or chopsticks until the seasonings are evenly combined.
  • Tip: If you’re using oyster sauce instead of abalone sauce, reduce the amount of salt added.

Add Cornstarch

  • Add 1 teaspoon of cornstarch.
  • Mix in one direction until the pork mixture becomes sticky and forms a paste.

Add Coriander

  • Add the chopped coriander and mix until well incorporated.

Steam the Pork

  • Transfer the pork mixture to a heatproof plate and flatten it evenly.
  • Bring water in a wok to a boil, then place the plate on a steam rack.
  • Steam on high heat for 10–15 minutes depending on the thickness of the meat.
  • For a 10-inch plate, 10–12 minutes is sufficient. Thicker layers may need slightly longer.

Check Doneness

  • The pork will shrink slightly when cooked.
  • You can test by pressing the surface — it should feel firm, not soft like dough.

Serve

  • Serve hot with a bowl of steamed rice.

Notes

1. Mix in One Direction — This helps the pork mixture develop a sticky texture, ensuring the meat binds well and stays juicy after steaming.
2. Flatten Evenly — A thinner, even layer helps the meat cook uniformly and prevents the center from being undercooked.
3. Adjust Salt When Using Oyster Sauce — Oyster sauce is saltier than abalone sauce, so reduce added salt slightly to balance flavor.
4. Choose Fresh Coriander — The freshness of coriander greatly affects the aroma. Avoid wilted leaves as they can taste bitter.
5. Test for Doneness — Gently press the center; if it feels firm and springy, it’s perfectly cooked.
