  3. The ripeness of the tomato will affect the taste of the dish, if you use very ripe tomatoes, it will taste sweeter but if you use less ripe tomatoes, it will be sourish, tangy
  4. In this recipe, I added dried shrimps but it’s optional

Tomato Egg Chinese Style Stir Fry | 番茄炒蛋简单做法

Ingredients

  • 2 tomatoes
  • 2-3 cloves garlic, minced
  • 5 grams dried shrimp (optional)
  • 3 eggs
  • 3-4 tablespoon cooking oil
  • 1 teaspoon cornstarch + 60 (4 tablespoon) water

  • 1-2 sprigs spring onion

Seasoning

  • 1/4 salt
  • 1/8 pepper
  • pinch of salt, pepper and sugar to taste

Instructions

  1. Cut one tomato into big chunks, another into small cubes
  2. Mince the garlic and chop spring onion in small cubes
  3. Wash the dried shrimp and drain dry
  4. In a bowl, whisk 3 eggs, add salt and pepper to taste
  5. In a frying pan, add cooking oil, add the beaten eggs
  6. Cook on low to medium heat so that the eggs are soft and smooth, remove from pan and set aside
  7. Add in the dried shrimp and garlic, fry till fragrant
  8. Then add in the tomatoes, fry till soft
  9. Add the cornstarch mixture, give it a quick fry
  10. Add back the egg and spring onion, season with salt and pepper and sugar
