Whenever I feel hungry or just a thought of a quick yet delicious breakfast or supper, I would always gravitate towards making this super simple quick and easy noodles recipe. Though it’s really easy to make, it’s very flavourful. You can also make this easy Chinese Noodle Recipe and pair it with fried chicken or any other dishes.
The key ingredient in this recipe is the shallots. Fry the shallots till the fragrance from shallots get infused into the oil. Then you can any seasoning of sorts. A simple one would just be soya sauce and some dark soya sauce. That’s it, really! In this recipe, I added soya sauce, dark soya sauce and some chilli shrimp paste with chopped spring onions.
Top tips:
- Don’t fry the shallot with high heat as over burning will cause it to taste bitter
- You can prepare a batch of shallot oil to keep in a container for a couple of weeks. Then you can make this dish even quicker.
- You can also add any other seasoning such as sesame oil etc
- In this recipe, I use Shanghai Noodles. You can use this recipe for other types of noodles.

Ingredients:
- 3-4 shallots 小洋葱 3-4 个
- 75 grams of Shanghai Noodles 上海面 75克
- 20 ml oil for frying 油20毫升
Seasoning and ganishing:
- 1-2 teaspoon of light soya sauce, or to taste 生抽 1-2茶匙
- 1/2 teaspoon of dark soya sauce 老抽 1/2茶匙
- A little Chilli shrimp paste, to taste 虾皮辣椒
Method:
- Cut the shallots into slices, as thinly as possible
- Fry the shallots with low to medium heat until golden brown. Set aside
- Prepared 75 grams of Shanghai Noodles. (Note: 75 grams per serving based on packet instructions)
- Boil a pot of water
- Place the noodles in the boiling water for 3-4 minutes according to packet instructions
- Strain water. Then mix noodles with shallot oil. This is done immediately to avoid the noodles from sticking to each other
- Add light soya sauce, dark soya sauce, chilli shrimp paste and spring onions
- Give it a mix.
- Ready to eat!
