Easy Chinese Tofu Recipe, Steamed Tofu with Dried Shrimps :: 虾米蒸豆腐

This Steamed Tofu with Dried Shrimps is very simple yet delicious. Only takes less than 15 minutes to make. Taste very delicious with a warm bowl of rice.

IMPORTANT NOTES AND TIPS:

  1. If you don’t have dried shrimps, you can also use garlic or shallots for this recipe
  2. Make sure the shrimps are dry before frying, if not the oil will splatter
  3. While frying the shrimps, do not move away from the stove, the shrimps turn brown very quickly. Continuously use the spatula to fry.
  4. When steaming the tofu, make sure the steam rack is above the water level.

Ingredients

  • 1 packet silken or smooth tofu 滑豆腐 1个
  • 20 grams dried shrimp 虾米 20克
  • 2-3 tablespoon cooking oil 油 2-3汤匙
  • 1/2 tablespoon caramel dark sauce 老抽 1/2汤匙
  • 1 tablespoon light soy sauce 生抽 1汤匙
  • 2 teaspoon oyster/abalone sauce (optional) 蚝油/鲍鱼酱 2茶匙 (可选的)
  • garnish with some spring onion 葱少许

Instructions

  1. Wash 20 grams of dried shrimps, the soak the shrimps for about 15 minutes (if you don’t have dried shrimps, you can also use garlic or shallots for this recipe)
  2. Strain off any excess water and leave the shrimps on the strainer to dry (make sure the shrimps are dry before frying, if not the oil will splatter)
  3. Remove tofu from the packet, transfer to a steaming plate. The tofu is very fragile, so, gently press the top for it to come off nicely. Pour out any excess water
  4. Fill a wok with water, bring the water to a boil, then steam the tofu on high heat for 5 minutes
  5. While the tofu is steaming, fry the dried shrimps. Add 2 to 3 tablespoons of oil in a frying pan. Use low to medium heat, fry the shrimps until golden brown. Then transfer to a bowl so that it doesn’t burn
  6. Once the tofu is ready, pour the dried shrimp and oil over the tofu, then pour over 1/2 a tablespoon of dark caramel sauce, oyster/abalone sauce (optional) and 1 tablespoon of light soy sauce. Garnish with some spring onion.
